So far this year I've been doing pretty good in my eating and weight-loss. It's not that easy, but not impossible either. I found this recipe for Taco Pie and already had the picture. So I decided to post it. I'm sure it can be incorporated into a diet; especially a Grace Diet. Just use low-fat Sour Cream, Lean Meat, low-fat Cheese, and plenty of Vegetables. I think I may try this soon. It looks really yummy! Here's the recipe I tweaked just a little.
Taco Pie
1 Taco Seasoning Mix
1 Deep Dish Pie Shell
1 lb. Ground Beef
1 med. Onion, chopped
1 8 1/4 oz. can Refried Beans
1 8 oz. jar Taco Sauce, divided usage
1 to 1 1/2 cups Nacho Chips or Fritos, crushed
Tomato
Lettuce
Sour Cream
Preheat oven to 400 degrees.
Thaw pie shell 10 minutes.
Prick bottom of pie shell thoroughly with fork.
Bake pie shell for 10 minutes.
Remove from oven and reduce temperature to 350 degrees.
In skillet, cook Ground Beef and Onion until meat is browned, drain excess fat.
Add Taco Seasoning Mix to meat.
In a small bowl, combine Refried Beans, 1/2 Taco Sauce, mix well.
Layer 1/2 of Refried Bean Mixture in the bottom of crust.
Top with 1 cup Cheddar Cheese.
Then layer again, Refried Beans, Meat, Cheese.
Crush Nacho Chips or Fritos all over top.
Bake 20-30 minutes until light brown.
Serve with Lettuce, Tomato, and Sour Cream.
Taco Sauce for additional topping.
