Here is my recipe for Chicken and Vegetables.


                                                          Chicken and Vegetables


8 Chicken pieces
5-6 Large Carrots
5-6 Large Potatoes
1 Pound Green Beans
1 Onion
2-3 Garlic Cloves
1 can Chicken Cream of Mushroom Soup
Oil and Butter
Seasoned Salt
Pepper

Put a small amount of Olive Oil or Canola Oil and butter in a large skillet or pan.
Put the Chicken in the skillet.
Season it well with the Seasoned Salt and Pepper.
Add the Onion and Garlic.
Brown it all together.
Add the Potatoes, Carrots, and Green Beans
Cover it all with Chicken Cream of Mushroom Soup and about 1/2 a can or so of Water.
Bring it to a boil.
Reduce heat, cover and continue cooking for about 45 minutes- an hour or until everything is done.
Can add more Water during cooking if needed. Check on it every so often.


I am starting to feel better now, but still have some improving to do. I saw a P. A. and a P. A. in training yesterday. I have Sinusitis or some kind of itis. They put me on an antibiotic. I guess it's helping. My husband, Alan, fixed dinner last night.We had Chili Dogs and chips. It tasted good, but probably's not on my diet. That's where the Grace comes in. I ate it and enjoyed it, but today I need to do better. We are having Pork Steaks and Vegetables for dinner. I guess that's a little better. Here is my recipe for the Pork Steaks.


                                              Skillet Barbecued Pork Steaks

2-3 Pork Steaks
Seasoned Salt
Pepper
Garlic Powder or Salt
A small amount of Canola Oil
Barbecue Sauce

Put a small amount of oil in a large skillet. Put the Pork Steaks in the Skillet. Season well on both sides.
Brown the Steaks well on both sides. Cover and continue cooking until done. Turning often. Add the Barbecue Sauce to both sides and cook until they are tender.

I haven't posted in a few day's because I've been sick.:( . It started out , the grandkids, that go to school, got sick ( all but one).( He must have a really good immune system!)  I'm the designated babysitter so they came here, since they couldn't go to school. Then lo and behold I got sick! Ugh! I think I got sicker than any of them. I had a fever, sneezing, coughing, aching; just plain sick! Needless to say I didn't eat during this time hardly at all. A few crackers and that's about it for a few days! I took some Tamiflu, Cold & Flu medicine, etc. I'm feeling better, but still don't feel good. I guess it will take time to recuperate. Anyway, if there is a plus side to this, I've lost some more weight! Not much though! Maybe a pound or 2. Every little bit counts though! LOL!  I have been eating quite a bit of soup. I made some potato soup one day that some of the kids were here, because they love it and I thought that might be something they would eat. They did eat some, but they felt so bad they didn't eat it all. I, on the other hand, wasn't sick yet, so I did eat some it was really good and comforting! Here is my recipe for it:

                                                                   
                                                                   Potato Soup      
                                                           
6-8 Red or White  Large Potatoes
1 small Onion chopped
1 can Evaporated Milk
1/2 stick Butter
Water to cook Potatoes in. Enough to cover totally.
Salt and Pepper.

Put the Potatoes and Onion in a large pot.
Cover with cold water above the vegetables.
Add the Salt ,Pepper, and Butter.
Bring to a boil.
Reduce heat, cover, and continue cooking until done and the water has reduced some.
Use a potato masher and mash the potatoes until they are in small pieces.
Add the milk, and a little water, if needed.
Heat to a low boil.
Simmer just a few minutes.
Serve with crackers.
About 6-8 servings.

We need to be eating, all of these foods, on a regular basis. It might be hard to eat all of them, but if we just eat some of them regularly I'm sure that will help. Look over the list. I'm pretty sure you can find some things on it to eat. Your joints will thank you, if you do. Try incorporating them in salads or as finger foods with a meal. It's really not that hard. We just have to adjust our eating to do it. I intend to work on adjusting my eating habits to try and improve my health. I invite you to join me.

I've decided to put recipes on here , on a more regular basis. Hopefully they will help us lose weight a little easier and more enjoyably too.I will post the ones I've already tried to make it a little less risky  for you to try, also.  I created this recipe to lower the fat and calories of Fried Chicken, but keep as much of the flavor as possible.
                                           
                                                                    Oven Fried Chicken

Preheat oven to 350 deg.

1 Chicken cut-up or legs, breast, wings or any pieces you like
2 cups low-fat Buttermilk
Several shakes, to taste, of Hot Sauce
3 cups Panko Bread Crumbs
1 teaspoon Seasoned Salt
1/2 teaspoon Garlic Powder
1/4 teaspoon Pepper
Cooking Spray

Marinate the Chicken pieces in the Buttermilk & Hot Sauce a few hours or overnight.
Mix the Bread Crumbs, Seasoned Salt, Garlic Powder, and Pepper together in a large freezer bag.
Put the Chicken pieces in the bag, a few at a time and shake to coat with the Panko Bread Crumb mixture. Spray the bottom of a baking tray.
Lay the Chicken on the tray and spray the Chicken with the Baking Spray.
Bake in 350 deg. oven for 1 hour or until golden brown and the Chicken is done inside.

I happen to love conventional Fried Chicken, but don't need all the extra fat. So I came up with this recipe to get the flavor without so many calories. It's a yummy alternative to skillet Fried Chicken. Give it a try!

Today and yesterday we went and got some groceries. Hopefully I got some stuff that will help me in losing weight. It's pretty cold right now so we got the stuff to fix chili and possibly soup. I don't think I've gained much if any since I lost the 15 pounds. I just need to pay more attention, so I can continue losing weight. Here is my recipe for Chili:

Ingredients:
1 pound lean Ground Beef
1 small can Tomato Paste
 Most of a can of Tomato Juice
3-4 cans of Chili Beans
1 small/or 1/2 Med-Large Onion
1-2 cloves of Garlic

Brown the Ground Beef, Onion, and Garlic together.
Drain.
Add the Chili Beans, Tomato Juice, and Tomato Paste
Mix together well and bring to a boil.
Reduce heat and stir until it turns to a simmer; scraping the bottom of the pan often.
Cook at simmer for about 20-30 minutes.
Continue to scrape the bottom of the pan often; avoiding actually stirring too much.

Today I weighed and have gained about 2 pounds from what I had gotten down to. Not too bad, considering I haven't really been on track too well since Christmas. I haven't messed up bad, but I haven't been concentrating as well as I should have either. Time to regroup, get organized and zoom in on this. I babysat Micah (my 10 month old grandbaby) yesterday. If I did that everyday I would probably lose weight faster. I was exhausted last night! ( In a good way.) I didn't have a lot of time to eat much. I do definitely have to concentrate on what I am doing, because old, bad eating habits are hard to change. Ok, starting today I plan on paying better attention to my health in every way I know how. By losing weight, exercising, eating healthy foods on a regular basis, and taking vitamins. So hopefully I can stay on track, lose some more weight, and get healthier this year. We finally got the tree down; so now we can move the AbCoaster Pro back into the living room. That will make it a lot easier to exercise , on a more regular basis. I've kind of been on a plateau, through the Holidays, so I haven't really lost any more weight, but haven't gained a lot either. Thank goodness! I plan on exercising today though, and hopefully keeping it up, too! Of course I still have to watch my diet. With the diabetes, kidney disease, etc. I don't really have a choice. So I am going to go weigh, and try to stay on my diet today! Hopefully I can do that! I will try to post a lot more often this year and try to be a help and inspiration to others, as well! So together we can lose weight and get healthier!

Today is Monday, Jan.7,2013. I am trying to get started back on my weight-loss plan now. I kind of relaxed over the Holidays; but I'm motivated to get back on track ,with a fresh start, in 2013! I hope you will join me ,if you need to lose weight , so we can make America healthier, one person, at a time! Basically, eat a lot less salt, quit eating sugar, lower your calorie intake, on a daily basis, eat low fat, high quality protein, plenty of vegetables and some fruit, and 1% milk. You can eat whole grain bread, but not a lot. About 2-3 slices a day. Any kind of cooked cereal, healthy; not pre-sweetened dry cereal, eggs, and peanut butter. I think that just about covers it. Here are some examples of foods to eat:

Lean protein, such as: Lean Meat, Peanut Butter, Cheese, Eggs, 1% Milk, Fruit, Vegetables, and just about anything that's low in fat, sugar, starch and salt. And high in vitamins, lean protein, calcium and other minerals. You can use your own judgement on most of this, if you have good self-discipline.

Happy New Year! Today I want to get some work done, in the house. Also I plan on fixing a New Years Meal of Ham and Beans, Coleslaw, and Cornbread. Hopefully this year will be more productive in losing weight, getting in shape, and blogging. I may blog more on other subjects too. Like my grandchildren, pets, and more with recipes.
