                                                                Meat Loaf

When I think about Meat loaf my mind goes back to when I was a child. I remember the delicious smell of it cooking in the oven. Along with the mashed potatoes and vegetables too. Usually green beans, but not always. I thought my mother was the best cook in the world. She was, in my world, that is. I'm sure there were others, but I loved her cooking. She made delicious Fried Chicken, Spaghetti, Beef Roast, and a whole lot more. and, of course, the Meat Loaf. Here's my recipe for Meat Loaf; I'm not sure what her recipe was, but this is close, I think.


                                                               Meat Loaf
1 1/2 pounds Ground Chuck
1 Small Onion chopped
1 Clove Garlic chopped (optional)
1 Egg
1 cup Oats
1 cup Ketchup (can use low-sodium)
1/2 teaspoon Seasoned Salt or Seasoned Salt Substitute
1/4 teaspoon Pepper

Mix the Ground chuck,Onion, Egg, Seasoned salt, Pepper and 2/3 cup Ketchup in a bowl. I use my hands to mix it. Put it in a loaf pan and shape it.Spread the remaining Ketchup on top.
Bake at 350 degrees for one hour. Let stand a few minutes before slicing.

I've been making this recipe for a while. I think it's one of the healthiest I've seen. It's also delicious. If you like Meat Loaf, try this recipe. It's one of the best!
