Recipe #324. Holiday Countdown.

                                                       Sweet Potatoes and Pineapple

6-8 Sweet Potatoes; peeled and cut into small cubes.
1 Whole Pineapple; peeled, cored and cut into small cubes.
Olive Oil to coat the Sweet Potatoes and Pineapple with.
1/2 Stick Butter; cut in cubes.
1/4 Cup Brown Sugar Splenda.
1 Cup Pineapple Juice.
1/4 Cup Pure Maple Syrup.

Put all of the ingredients into the Crock-Pot.
Cover and cook on Low for 4-6 hours or on High for 2-4 hours.
Stir gently once or twice.
