Beef Broccoli and Brown Rice Soup
1 Pound Lean Stew Meat; cut into thin strips.
1 Small Onion; chopped.
1-2 Cloves of Garlic; chopped.
1 Cup Instant Brown Rice.
1 Pound Bag Frozen Broccoli Florets.
1 Box Low-Sodium Beef Broth.
2-3 Low-Sodium Beef Bouillon Cubes.
Water to make the Pot about 3/4 full.
Olive Oil.
Brown the Beef Strips, Onion and Garlic in the Olive Oil.
Transfer to the Crock-Pot with a slotted spoon.
Add in all of the other ingredients except the frozen Broccoli.
Cover and cook on Low for 8-10 hours or on High for 4-5 hours.
Add in the Broccoli during the last 1-2 hours of cooking time.
