I weighed this morning and seem to be holding my own. But actually I'm not satisfied with that. I am going to have to put more thought and effort into this. I think I really will start exercising and try to do so on a more regular basis. If you would like to, you can follow along, with me, on my Grace Journey, of losing weight. I may switch, over to a new blog, for my recipes, because I am writing a cookbook, too. I haven't decided yet. So for now I will post another recipe on here.
Slow-Cooker Chicken Pot Pie Soup
3-4 Boneless, skinless Chicken Breasts, diced.
2 Boxes of Chicken Stock in a Box.
2 Large Stalks of Celery, chopped.
3-4 Potatoes, peeled and diced.
3-4 Large Carrots, peeled and cut in circles, from cutting, across the Carrot.
1 cup Frozen Peas.
1 small Onion, chopped.
3 Low-Sodium Chicken Bouillon Cubes.
1-2 Tbs. Flour to thicken a little.
Pepper to taste.
Salt, if needed.
Put the Chicken, Celery, Potatoes,Carrots, and Onion, in the slow-cooker.
Add the Chicken Stock.
Cook on High 3-4 hours. Low 6-8 hours.
Add the Peas, during the last hour, of cooking.
Stir the Flour in a small amount, of warm Water, until it is well-blended, with no lumps.
Stir the Flour Mixture, into the Chicken Stock.
Continue cooking, until it is thickened a little.
Serve, in a bowl,with a Biscuit or two, to make a Pot-Pie.
6-8 Servings.
I happen to really like Chicken Pot Pie. It does have a lot of calories, though. This is a way to get the flavor, without quite so many calories. You can leave out the Biscuits or limit the amount, if you want to save even more calories.
Or you can put the Biscuits on top to bake them , and serve like this.
