                                                           Homecoming 2012  
When we mention Brendan, Shania, Logan, and Micah, on this blog; these are our grandkids. We're kind of obsessed , with them. So a lot, of our posts, will include them. Also, frequently; their friends and/or teammates, along with, quite possibly their opponents. Brendan and Logan are very active, in sports, which is what the subject, of a lot, of our photography, is about. Shania is beautiful and very photogenic. Although, she is 14 and not overly interested, in having her picture taken. We do sneak some pictures, of her though, and, once in a while, she will even pose for some. Then there's little Micah, who is pretty photogenic, himself. We take a lot, of pictures, of him, too. He is so cute and pretty easy to photograph. So, now that you have a little information, about us, maybe you can kind of understand our posts, and follow along.

                                         The guys at the Marion Fire Dept. love to give children
                                         tours. Most of them know Logan. He's been several times.
                                         Tip, always call ahead first. The Fire House is their Home
                                         away from Home. Make sure they don't have stuff going on.
                                         For boys and girls that are fascinated by firetrucks and
                                         firefighters, a tour of the local Fire House makes a great outing.
                                         Logan's turn out gear purchased from Uniformdudsforkids.com.
                                       
                                                                          Beef Stew

1 1/2 pounds Beef Stew Meat.
1 Bag Frozen Stew Vegetables.
1 Small Bag Baby Carrots or about 5-6 Large Carrots cut-up in chunks.
4-5 Potatoes cut in chunks.
2-3 stalks of Celery cut in slices.
1 can or 1 small box Button Mushrooms.
2-3 Beef Bouillon Cubes.
1-2 Tablespoons Flour (unbleached or wheat).
Or can use 1 packet Stew Seasoning Mix.
Salt and Pepper to taste.

Put the Stew Meat in a large Dutch Oven or similar pan.
Cover with cold water.
Add the Bouillon Cubes. 3 if not using the Stew Seasoning.
1-2 if using it.
Add Salt and Pepper. (Very little Salt if using Bouillon Cubes.)
Bring to a boil; stirring frequently.
Reduce heat to a low boil.
Cover and continue cooking for about 2 hours.
Add the Flour or Stew Seasoning Mix.
Mix it with some warm water before adding it to avoid lumps.
If using Flour do the same thing to avoid lumps.
Stir until well-blended.
Bring back to a boil and add the Carrots, Celery and Potatoes.
Cook a half hour.
Add the frozen Stew Mix.
Stir well and bring back to a low boil.
Continue to cook on low until all the Vegetables are done.
Serve with Bread of your choice.





I decided to post some more pictures from Micah's 1st Birthday Party! 

I might even post some earlier pictures to show how far he has come in a year! He's an adorable 1 year old now and doing rather well. Especially compared to this time last year. When Micah was born on February 5, 2012  he was very small, 5lbs.ozs. and it took about 20 minutes to get him breathing. He was transferred to Cardinal Glennon Children's Hospital, in St. Louis, Mo. where he stayed for about 5 weeks. When he came home he was still small; about the size of a newborn. He weighed a little over 7 lbs. Now, although he is still small, he is growing good and is pretty chubby! I suppose I will now post some more, of his, birthday pictures.

                                                                             Chili




1 1/2 pound of Ground Chuck or Ground Turkey.
3-4 cans of Chili Beans.
1 small can Tomato Juice. 
1 can Tomato Paste.
1 small Onion, chopped.
2 cloves Garlic, chopped.
1 teaspoon Chili Powder or
1 Chili Seasoning Packet (Chili Man or Ray's).

Put the Ground Chuck or Ground Turkey in a large skillet.
Crumble up and start to brown.
Add the Onion and stir together, with the Meat.
Continue browning a few minutes.
Add the Garlic and finish browning.
In a large pot put the Tomato Juice, Tomato Paste, Chili Beans, and Seasonings.
Using a slotted spoon add the Ground Meat mixture to the pot.
Stir together well.
Bring to a boil. 
Reduce heat and continue to simmer for about 20-30 minutes or until cooked together well and hot.

We probably are going to make this sometime this weekend. Probably today.It's been snowing some here lately. So it seems like a good dish to make right now. Also pretty nourishing. With the Ground Beef or Turkey and the Beans there's a good amount of protein. The Tomato product, Onion and Garlic add vitamins, mineral and other nutrients, too. Serve with Crackers, Cheese and Raw Vegetables or Salad for more nutrition.

This looks like a serving of Baked Salmon. I think I got this picture from Pinterest. I've had it for a while. As long as the pasta is whole wheat, it looks like it would be very nourishing and pretty low in calories. I will give you my opinion for a recipe for this dish; other than the long skinny things. I'm not sure what they are. They might be another form of pasta.

4-6 ounce piece of Salmon per serving.
1 cup of Broccoli per serving.
1/2 cup Penne Pasta per serving.
1/4 Onion chopped.
1/4 cup Low-Sodium Soy Sauce.
Small amount of Olive Oil.
1 Tbsp. unsalted Butter.
Seasoned Salt or Seasoned Salt Substitute.
Pepper.

Put the Butter and Olive Oil in a stir-fry pan. Heat over medium heat until the Butter is melted. Stir together.
Brush the Salmon with the Butter and Olive Oil and season on both sides. Save the remaining Butter and Olive Oil mixture in the stir-fry pan.
Bake according to directions on package.
While the Salmon is baking, cook the pasta, according to directions for Aldente.
Add the Broccoli and cook with the pasta for the last few minutes.
Drain and shock with cold water, to stop cooking and retain the dark green color, of the Broccoli.
Put the Onion, in the pan with the remaining Olive Oil and Butter.
Saute lightly.
Add the Broccoli, Pasta and Soy Sauce to the pan.
Stir and cook until the Pasta is done and the sauce has cooked down.
Serve on a plate with the Salmon.
Healthy and Delicious!
